Smack in the heart of CBD near Tanjong Pagar MRT is a popular dessert joint with a super catchy name - Cake Spade. Nearly 2 years old, Cake Spade has gained a loyal following for its beautiful and delicious cakes. Where many rising F&B establishments are increasingly focused on innovative unique creations, Cake Spade stands out for staying true to the classics, consistently churning out simple yet stunning cakes.
Its success did not come overnight. Owner Zenn Eng has a strong foundation in baking: she studied at At-Sunrice Global Chef Academy; apprenticed at Shangri-La’s pastry team; baked for Island Creamery; and was holstered to fame through years of online home delivery. The growing demands for her cakes soon justified a bigger oven and physical storefront.
It's not hard to see why. We tried a few cakes on my first visit, and none of them disappointed.
Spiced Carrot Cake (S$5.90) - roasted walnuts, carrot shreds, cinnamon and cream cheese frosting
Moist, flavourful, dense, yet absurdly light, this makes it to my list of the best carrot cakes in Singapore. The spices are faint yet detectable, lingering at the back of each bite without overwhelming the other ingredients. I especially love the delicate cream cheese frosting that boasted a beautiful orange hue and was just the right amount of sweet.
Strawberry Tofu Cheesecake (S$5.90) - on digestive biscuit crust
Points to the big and juicy strawberries, but the tofu cheesecake was overly gelatinous. Eaten with the jelly layer above, the entire dessert tasted more like a creamy agar agar than a cheesecake. It is worth a try, just not something I'd order again.
Hummingbird Cake (S$5.90) - pineapples, bananas, and coconut
Essentially a pineapple banana spiced cake, Cake Spade's rendition of the US favourite is a must-try. Coconut's the special ingredient here, adding a slight creaminess and a tropical touch. Lightly sweetened, moist and fragrant, this cake is a pleasant surprise and break away from the norm.
Cake Spade's not the only store selling classic sponge cakes, but it's definitely one of the best. Great textures, amazing flavours - we barely tried a third of what's offered and we're already in love. I'm not the biggest fan of sponge cakes, but for Cake Spade I'd gladly make the exception.
